Coleslaw from the garden

Rachel sent me this pic of her coleslaw fixings from the other night. Cabbage, onion leaves and carrots from the garden. We basically grew everything but the mayonnaise... and man was it good.

Not really... it's basically impossible. You could shade them a bit, but their inclination is to bolt when the weather warms up. They also get all kinds of bug and rot issues once the ambient temperature reaches a certain point. We basically get cabbages into May... and that's it. Starting again in Fall works, though.

You can make your own mayonnaise too. All you need is egg yolks, olive oil (much better than the store-bought stuff with soybean oil), a bit of vinegar and lemon, and a few other trace herbs for flavor. Once your olive trees grow enough you can make your own oil, and with enough apples or grapes, you can make vinegar.

I'll be waiting for that post in about 3 years...

Yeah. I need to make more mayo. Rachel is working on it. We decided to go completely store-bought soy and corn-free this week. The gen-mod stuff is simply too scary.

Unfortunately, my olives aren't happy. The freezes keep knocking them down. Maybe I'll make it with duck fat...
