This was our first year trying cauliflower. I think we had luck because we got transplants in the ground when it was still good and cool out, plus we were growing in lots of compost.
My cauliflower did well (growing pots with composted soil), although not as impressive as yours. I found that after you cut the main head off, you get the same thing you get with broccoli: lots of little florets coming up. Then I found that those florets are really tasty if you douse them in olive oil and grill them next to a steak. Almost like popcorn.
